Capturing the nostalgic holiday flavor of cherry bon-bons, elevated to an adult palette. The roasted coffee notes of Mr. Black ground the sweet liqueurs of crème de cacao and amaretto while the rye adds a spicy undertone and warmth. What could otherwise be saccharine is balanced by cherry and chocolate bitters. Finishing with an egg white brings the creamy mouth feel of the confection. The snifter is an homage to the candy shape and also ensures the bitters-laced foam is present in every sip.
Combine the Mr Black, Rye, Amaretto and Dark Crème de Cacao with the cherry bitters, a couple drops of the cherry juice and 1 egg white in a shaker.
Dry shake very hard to ensure a strong head of foam, then add ice to the shaker and shake until cold.
Double strain into a snifter and allow the foam to stabilize. Add a good quality maraschino cherry on a pick to sit just at the edge of the foam.
In a circle around the cherry gently drop in the chocolate biters, so they blend with the top layer of foam.
