The Red Eye is a riff on the Paper Plane. I really like the Paper Plane cocktail and there is another riff called the Lost Plane which simply substitutes rum for the bourbon. I wanted to add a coffee cocktail to that family of riffs and the reason for the name "Red Eye" is a term used for an overnight or late night flights that requires people to drink coffee to stay awake and fits in nicely as a play on words for the Paper Plane family of cocktails.

Ingredients

 1 oz Mr Black Coffee Liqueur
 1 oz Bourbon Whiskey(Elijah Craig Small Batch)
 1 oz Aperol
 1 oz Amaro Nonino
 1 oz Lemon Juice
 1 oz Espresso

Directions

Make a small cup of espresso 5-10 minutes prior to mixing your cocktail. The reason for this is that you don't want to mix hot espresso in your cocktail shaker but you also don't want the espresso to sit too long as it can get bitter.

Place a coupe glass in the freezer to start chilling.

Combine all ingredients into a cocktail shaker with ice and shake for 12-15 seconds.

Take your coupe glass out of the freezer and strain your cocktail from the cocktail shaker into the coupe glass.

Garnish with traditional 3 coffee beans.
