I wanted to create a cocktail that evokes the joys of a beach, but not necessarily one filled with tourists or bikini-clad volleyball players. It’s a contemplative drink, with Mr Black and fernet adding a deep richness to the rum. Tropical spices float in and out of each sip, while the pineapple and lime are lingering reminders of the sunshine that made this day a great one. Like a well-worn pair of sandals that has seen many such days, this cocktail is the quiet comfort of a sunset in the sand.



 1.25 oz Demerara Rum(Hamilton 86)
 0.75 oz Mr Black Coffee Liqueur
 0.25 oz Fernet-Branca
 0.25 oz Allspice Dram(St. Elizabeth)
 0.25 oz Cinnamon Syrup
 1 oz Fresh Pineapple Juice
 0.50 oz Fresh Lime Juice
 2 drops Saline Solution
 2 dashes Chocolate Bitters(Angostura Cocoa)



Shake all ingredients minus bitters with ice.


Strain into a chilled rocks/old fashioned glass.


Add and top off with crushed ice.


Top with chocolate bitters and garnish with pineapple fronds.
