This cocktail is the combination of my personal favourites. It started with the question, what ingredients would excite me if I see them on the menu of a cocktail bar? My go to choice of cocktail type, sour, with my all time favourite gin, Gin Mare, anything related to coffee, and hints of citrus and rosemary complimenting all these flavours. This is Mr. Black traveling all the way from Australia to the Mediterranean part of the world, giving life to this silky mix.

Ingredients

 45 ml Botanical gin (Gin Mare)
 15 ml Mr Black Coffee Liqueur
 30 ml Lemon juice
 10 ml Homemade rosemary syrup
 2 dashes Orange bitters
 15 ml Egg white (or aquafaba for the vegan version)

Directions

Prepare the rosemary syrup in advance by combining 1:1 simple syrup and a couple of sprigs of rosemary, simmering the mix for a while and letting it cool down.

Add all the ingredients into a shaker tin and dry shake for a few seconds.

Add ice into the frothy mix and shake until the tin is very cold.

Double strain into a low old fashioned glass.

Garnish it (carefully, without breaking the foam) with half of a dehydrated orange or lemon slice and a small sprig of rosemary.

    I got to try this first hand since I happen to live under the same roof with its creator. It’s a delicious cocktail full of surprises. Love the rosemary twist…, and so silky!!
