I was inspired by outdoor brunch in the summer. Coconut and pineapple give a great summery vibe and coffee usually accompanies brunch in some form (for me it's always iced!).

The bourbon gives great flavor and pairs well with the pineapple and coffee. I initially built this cocktail with rum, but I found that I liked the hit of bourbon flavor more in this daiquiri riff.

Ingredients

 1.00 oz Mr. Black Coffee Liqueur
 1.00 oz Bourbon (Eagle Rare)
 0.50 oz Pineapple Juice
 0.50 oz Coconut Water
 0.50 oz Lime Juice

Directions

Put all of the ingredients in a shaker, and shake with ice for around 15 seconds

Double strain into a couple glass

Garnish with pineapple pieces and a sprig of fresh mint
