The smell of fresh bread. Soccer on the TV. Lively chit chat between the rotating roster of customers, most of them locals, and all of them friends. It's just after lunch time, and you're sat at your favorite tavern, enjoying some respite from everyday life. You order your usual, "um café e uma pinga." Your friends follow suit, with a smile. This small ritual that's become one of your great pleasures gives meaning to every mundane afternoon.
Inspired by the feeling and flavors of Portugal.
Rinse a cocktail coupe with aguardente (marc brandy).
Pour the Mr. Black, sour cherry liqueur, juices, and syrup into a shaking tin.
Add ice to the tin.
Shake vigorously for about 10 seconds.
Garnish with a little bit of grated 70% dark chocolate.
In a jar, add the peel and rinds of 1 quince, plus half of the actual fruit, to 1 cup of 1:1 simple syrup. Let it infuse for about 48 hours, and then fine strain the liquid into your syrup bottle of choice, and enjoy!
