I wanted to create some kind of hot drink before the competition ended. I was thinking about ideas for a coffee toddy, and it struck me to make something inspired by a dirty chai. A large dose of Mr. Black meets smooth aged rum and Caribbean spiced liqueurs and bitters, all topped off with hot chai tea. The lemon garnish adds the subtlest acidity to balance the big punch of warming spices. Given the Guatemalan rum, I decided to name it in Spanish, and so my dirty chai toddy became the Sucio.



 1 oz Aged rum (Zacapa 23)
 1 oz Mr. Black
 1 tsp Allspice dram
 1 tsp Velvet falernum
 2 dashes Angostura bitters
 5 oz Hot chai tea
 1 Lemon wheel (for garnish)
 1 Cinnamon stick (for garnish)
 1 Star anise (for garnish)



Add the bitters, liqueurs, and rum to a heat-proof mug.


Top with around 5 oz of hot chai tea.


Garnish with lemon wheel, cinnamon stick, and star anise.
