We were planning a Fall Friend Fest to catch up with friends we had not seen since before the pandemic, and I needed an Irish whiskey cocktail that screamed "Autumn". I combined Irish whiskey with our pumpkin chai cold brew as an Irish coffee alternative, but it was a bit bitter. Cinnamon syrup toned it down, as well as the addition of Mr. Black which also helped build a beautiful foam. I made a spiced sugar glass with broken star anise pods to garnish and crunch on after the cocktail is gone.

Make the spiced sugar glass: I combined some of my cinnamon simple syrup in a small sauce pan on the stove. I added the remnants of dtar anise pods and a few dashes of pumpkin spice. Bring mixture to a boil on medium heat for about five minutes. Immediately turn off heat and pour onto a parchment lined baking sheet. Use a spatula to spread the sugar across the pan making brush strokes for some definition at the ends. Let it cool completely (about one hour) then break apart into desired pieces.
Add the cold brew, Mr. Black, whiskey, and syrup to a shaker.
Dry shake vigorously to build up that foam.
Add ice and shake again.
Pour into a Nick and Nora glass and garnish with a piece of spiced sugar glass.
