This is a complex cocktail with notes of coffee, dark chocolate and cherries which evolve into an absinthe finish with a hint of cinnamon.
My inspiration started with the desire to create a coffee cocktail with absinthe. I knew that the two flavors complimented each other. The idea of adding the cherry element stemmed from the fact that the fruit coffee beans come from is called a coffee cherry. I envisioned these flavors blending well together.

2 oz Mr. Black Coffee Liqueur
 0.50 oz Luxardo Maraschino Originale
 0.25 oz absinthe verte
 0.25 oz cinnamon simple syrup
 2 black cherries
 3 dashes chocolate bitters
 1 Luxardo cherry
 1 lemon peel

Muddle 2 black cherries in shaker.

Add Mr. Black Coffee Liqueur, Luxardo Maraschino Originale, Absinthe verte and cinnamon simple syrup to a cocktail shaker

Add ice and shake well.

Strain into a martini glass.

Add 2-4 dashes of chocolate bitters.

Garnish with the lemon peel spiraled around the Luxardo cherry on a skewer.
