This is a complex cocktail with notes of coffee, dark chocolate and cherries which evolve into an absinthe finish with a hint of cinnamon.
My inspiration started with the desire to create a coffee cocktail with absinthe. I knew that the two flavors complimented each other. The idea of adding the cherry element stemmed from the fact that the fruit coffee beans come from is called a coffee cherry. I envisioned these flavors blending well together.
