A few years back I was in Rome in late September and met a friend whom I've never seen since then. We had a black coffee followed by a Carbonara near the Pantheon, it was the best carbonara I've ever had and I try to recreate it now and then. This drink is inspired by that, and as all carbonara lovers know a genuine carbonara has no cream in it.
Fatwash the bourbon with Pancetta: Fry the Pancetta slowly to release maximum fat. Let 120 ml bourbon mix with 20 ml Pancetta-fat. Freeze for a few hours, separate the fat from the liquid, finestrain the bourbon.
Parmesancake: Grate parmesancheese and put in a small circle on a plate in the oven, 200 degrees celsius, 3-5 minutes. Let it cool.
Brown sugar simple syrup semirich 1:1,5
Add the bourbon, sherry, coffee liqueur, lemomjuice, brownsugar syrup and egg into a shaker. Dryshake first, then shake with ice. Doublestrain. Add black peppar on top and serve with parmesancake.
