Being a bar manager at a coffee/cocktail bar, this challenge was perfect. I wanted to encapsulate the creamy texture/taste of espresso while also incorporating liquor in a balanced way. My love for Ireland inspired the spirit choice and the name. St. Gobnait was an Irish saint that started beekeeping laws in Ireland. She protected her church by throwing bee hives at raiders which is why I chose the honeycomb and cloves to represent bees in a hive. Mr. black is what brought it all together.

Combine all ingredients into cocktail shaker
Soft shake with cubes for 30 seconds
Single strain into chilled Nick and Nora cocktail glass ; no finish ice
Garnish with honeycomb clove garnish. This garnish is created by cutting a honey comb into a half circle. Whole cloves are then placed into every other hole of the honeycomb.
I will say, when you’re pouring the drink it will seem as if it is going to overflow in the Nick & Nora but don’t worry it won’t. It will fill up right to the rim of the glass! A full drink with full flavor!
Such a delicious cocktail. Balanced with a perfect viscosity and flavor. This cocktail definitely melts in your mouth with the perfect remnants of coffee and honey. Definitely don’t want to miss out on tasting this cocktail!

I just noticed it says two dashes clove bitters, I’m not sure how or why it changed but it’s supposed to be two drops not dashes.
They call him the Wizard and for good reason!
