I had the idea of fat-washing pineapple rum with coconut oil to make a variation of an old fashioned, but with rum and a completely different flavor. This worked out amazing, and then I realized that Mr. Blacks would work really well instead of Demerara syrup, so that’s essentially how this drink came to be. The beauty is in the simplicity. It’s still surprisingly complex in flavor though so it delivers on all fronts. This is probably one my favorite things I have created. I hope you enjoy it!



 1.50 oz Coconut oil fat-washed Pineapple Rum (Plantation)
 0.50 oz Mr Black Coffee Liqueur
 0.25 oz Orange Oleo Saccharum
 2 drops Saline
 2 drops Chocolate Bitters(Woodford Reserve)
 2 dashes Elamakule Tiki Bitters(Bittermens)



To fat wash the rum, I used a 1/6 ratio of rum to melted coconut oil and suveed that just to keep the mixture emulsified.. Do this for 1 hour. If you don’t have a suvee, bring a pot of water to just hot enough to melt coconut oil, and put your rum/coconut oil mixture in a waterproof plastic bag in the water for an hour.


Freeze the Pineapple Rum/coconut mixture, and strain through a rinsed coffee filter.

You now have coconut oil-washed pineapple rum.


Combine rum, Mr. Blacks, Orange Oleo, Saline, and bitters in a mixing glass. Stir down until chilled.


Strain over a big cube of ice in a rocks glass.


Garnish with a slice of dehydrated pineapple (I used pineapple fronds in the photo because I ran out of the real garnish).
