Autum is the time for nuts and spice and in the shop a bottle of maple suryp caught my eye due to the bright orange leaf. I wanted to make somthing nutty, clean, simple with a strong flavour profile. Everyone's tried to reinvent the old fashioned but it's stood the test of time for a reason so I wanted to stick the tried formula. I've also been trying out infusions and was really happy with using nuts beacuse they won't ferment easily and alter the ABV, but will produce a smooth flavour.
