Inspired by the tiki drink, Mr Bali Hai, coffee and orange is such a nice pairing and it can be utilise to make a refreshing drink. So why not combined both into a tiki style drink. The orange olea saccrum adds a subtle bitter sweetness to that really enhances the coffee flavour of Mr Black with the rums giving it some body to the drink.

Ingredients

 45 ml Dark Jamaican Rum (Myer's Rum)
 30 ml Lightly Aged Rum (Flor de Cana)
 30 ml Mr Black Coffee Liqueur
 45 ml Unsweetened Orange Juice
 30 ml Lemon Juice
 15 ml Orange Olea Saccrum
 15 ml Simple Syrup

Directions

1. Combined all ingredients into shaker.
2. Add small amount crush ice/pebble ice and whip shake
3. Open pour into a tiki mug
4. Top with Crushed Ice
5. Garnish with orange wheel + mint spring.

Oleo Saccharum

7 large organic unwaxed orange peels
1 cup sugar

Peel 5 oranges and place them in a glass jar.
add 1 cup of sugar and muddle lightly.
add the peels of 2 more oranges and muddle again.
Close the jar and let at room temperature for 24 hours.
Add 120ml water, shake to dissolve and ready to use.
