Lightly spritzed, touch of viscosity and bright sweetness.
A balancing garnish to break up the bold round flavours of the drink.
Clean & contemporary coffee.

Ingredients

 40 ml Mr Black Coffee Liqueur
 20 ml Cold Infused Blueberry Mancino Bianco Vermouth
 10 ml Seppeltsfield DP116 Amontillado Style Apera
 60 ml Blueberry, Cinnamon, Spent Coffee Grind, Vanilla, Lactose & Maple Water Tea
 20 g Lacto-Fermented Blueberries

Directions

Combine ingredients in PET bottle

Press air out of bottle and seal with counter pressure sealing cap.

Force carbonate with Co2 bottle and reg at 50 PSI. Open bottle slowly, press out air again and reseal.
Again, Force carbonate with Co2 bottle and reg at 50 PSI.

Repeat one more time then unscrew and pour over ice in highball

Serve a ramekin of lacto-fermented blueberries on side.

Cold Infused Blueberry Mancino Bianco Vermouth

125g Blueberries
700mL Mancino Bianco Vermouth

Blitzed, vac-sealed and left to sit at room temperature for 12 hours. Strained through oil filter.

Blueberry, Cinnamon, Spent Coffee Grind, Lactose & Maple Water Tea:

1000mL Maple Water
250g Blueberries
60g Spent Coffee Grind
10g Cinnamon Powder
30mL Vanilla Paste
20g Lactose
80g Castor Sugar

Bring all ingredients to boil and lower heat to simmer for 20 minutes.

Lacto-Fermented Blueberries (garnish)

500g Organic Blueberries
10g Kosher Salt

Combine ingredients and lightly mix in bowl.
Add ingredients to a sterilised pickling jar (remove rubber seal from jar).
Add ziplock bag full of water into jar to fill the remaining air void and press blueberries down (this is to remove as much O2 as possible).
Store at room temperature in dark light for 5 days.
Strain juice into separate jar.
Store blueberries in fridge.
