Inspired by the world renowned classic, ‘The Bramble’ and our tireless, little friends the honey bee, who without, this drink would not exist. Local blackberries and lemons. Honey cooked into delicious lightly toasted syrup, Australia’s very own Mr Black Coffee liqueur, with a splash of London’s finest Dry Gin. Served over crushed ice, topped with a drizzle of blackberry syrup and three Blackberries.

This drink packs a zesty ‘Sting’, gearing up any worker bee after a hard week earning honey!



 22.50 ml Mr Black Coffee Liqueur
 22.50 ml London Dry Gin(Bombay Sapphire)
 30 ml Freshly Squeezed Lemon Juice
 12.50 ml Toasted demerara & honey syrup.
 15 ml Blackberry syrup



Build a 1:1:1 of Honey, water and toasted demerara sugar.
On low heat melt demerara sugar first in a pan. Once melted let it ever so slightly toast. (No more than 5 seconds from when the sugar has completed melted. trick is not to charcoal it, you only want it browned) once complete add equal parts water and then honey cook until combined.


Build a 1:1:1 of blackberry syrup. Simmer 128g of blackberry’s with 128g of sugar and 128ml of water. Bring the mixture to boil and leave for about 2 minutes. Strain, filter then bottle.


In a shaker add 30ml freshly squeezed Lemon juice.


Add 12.5ml of Toasted demerara & honey syrup.


Add 22.5ml of Mr Black coffee liqueur.


Add 22.5ml Bombay Saphire London Dry Gin.


Shake with ice for 10-15 Seconds.


Double Strain and pour over crushed ice in a Double Rocks glass.


-Garnish with a drizzle of 15ml Raspberry syrup and 3 fresh Blackberries.
