Covid-19 has closed so many countries boarders. So many of us haven't been able to take a vacation all year. I wanted to create something that reminded me of being on vacation somewhere tropical as it starts to get cooler in the US. I also wanted to bring out the fruity notes of the coffee while still maintaining the flavor. I created a well balanced cocktail the is both sweet, tart, fruity, and coffee flavored on the back end of the drink.

Ingredients

 1.50 oz Mr Black Coffee Liqueur
 1 oz Aged Rum(Bacardi Anejo Cuatro)
 0.75 oz Lime juice
 1 oz Passion fruit puree
 0.75 oz Cinnamon Simple syrup
 1.50 oz Chilled coffee

Directions

For the cinnamon simple syrup, I used a 1:1 simple syrup and put 2 cinnamon sticks and let it boil for 20 minutes. Then I let it cool down with the sticks in it. I bottled the syrup with the cinnamon in it and put it in the refrigerator until I was ready to use the syrup.

For the coffee, you can brew whatever coffee you like hot then put it in the refrigerator to cool down.

Mix all the ingredients in a shaker tin and strain over pebble or crushed ice.

For the garnish, I used a dehydrated lime wheel that happened to be very flagrant. I also created a half ice sphere using crushed ice and a citrus juicer. I filled the half ice sphere with espresso beans and torched it lightly

I put the straw close enough to the dehydrated lime wheel so as you sipped the drink through the straw, you can smell the lime as well as the roasted espresso beans.
