I've been somewhat obsessed with clarified milk punches for a while now. So I couldn't resist developing one for the coffee cocktail competition. As with all clarified milk punches, this drink does require some effort, but the end result is a sumptuous, smooth, silky drink with delightful notes of coffee, chocolate, citrus and spice. The recipe given here is for one portion, but you can easily scale up the recipe and make a large batch - it keeps indefinitely in the fridge!

Combine the Mr Black, Spiced Rum, Lemon Juice and Simple Syrup in a clean jug or jar.
Add the chocolate milk, and give a slight stir (not too vigorous, just to make sure they mix)
Leave to stand for at least 30 mins, or put it in the fridge overnight. The chocolate milk will curdle - this is what we want!
Pour the mixture through a cheesecloth/superbag, and then through a coffee filter. If the resulting liquid is not completely cloud-free, pour it through the coffee filter again.
If you're making a large batch, bottle it at this stage.
To serve, pour the punch over a large ice cube in a rocks glass, add the 3 dashes of bitters, and give a quick stir. Enjoy!
