This cocktail was inspired by a love of coffee and popcorn . It turns out the lovely sweet buttery popcorn flavors match perfectly with the nutty profile of cold brew coffee. This drink is inspired by the dessert drink served at Chicago restaurant Alinea , a popcorn and caramel shooter and also a drink at the PDT bar named the Cinema Highball which was a blend of popcorn infused Rum and coke. My drink uses a Buttery Popcorn fat washed rum , a little Hazelnut liqueur and the glorious Mr Black.

At the Alinea restaurant they serve a warm drink in a shot glass which is essentially the essence of warm sweet buttery popcorn. I wanted these flavours in my drink so by fat washing the rum we can get this flavour into our drink.

Ingredients

 30 ml Mr Black Cold Brew Coffee Liqueur
 10 ml Frangelico Hazelnut Liqueur
 30 ml Buttery Popcorn infused Dark Rum(Plantation Original)

Directions

Let's make the drink. Grab a mixing glass with ice.

Add 30 ml of Mr Black. Add 30 ml of Popcorn infused Plantation Original dark Rum. Add 10 ml Franjelico .The popcorn infused Rum is our sweetener in this drink as it was made with the addition of sugar.

Stir ingredients in the mixing glass . 30 stirs should be perfect.

Strain into a glass over a large piece of ice.

Garnish with popcorn.

Buttery Popcorn infused Dark Rum

Add 2 tbsp Canola oil to a saucepan. Heat until smoking and add Half a cup of popping corn. Once popped set aside.

In another pan bring 3 and a half cups of water to a simmer. Add 2 tsp salt , 7 tbsp butter and a half cup of white sugar.

Add popcorn to this liquid and simmer for a couple of minutes.

Strain this mixture through a sieve pushing out all the liquid from the popcorn.

At this point measure out 120 ml of this thick liquid. Add 240ml of Plantation Original dark rum to this mixture.Keep this in a container at room temperature for a couple of hours to infuse. Give it a shake every half hour.

Strain this mixture through a nut milk bag into another container.

Place the liquid into your freezer for a few hours. The butter in the mixture should have solidified now so just strain this liquid from the hardened butter.

You should now have a Sweet buttery Popcorn infused Plantation Rum which is a pale yellow in colour and delicious.
