The base inspiration for this drink was a honey lavender latte. Expanding upon that idea, the taste of French macaroons came to mind. Their delicateness and subtle sweetness reminded me of another French ingredient - Cognac. Cardamom is a surprising enhancement, which brings the coffee flavor to the foreground. Combined with coconut milk, both for texture and color, the result is a lovely sip of coffee with a sweet, smooth finish of honey.

Prepare a chilled coupe glass with a small amount of honey at the bottom.
Combine the Cognac, Mr. Black, Coconut Milk, Honey Lavender Syrup*, and Cardamom Bitters in a cocktail shaker.
Add ice and shake for 10-12 seconds.
Double strain the cocktail into the chilled coupe.
1/2 cup Honey
1/2 cup Water
2 tsp. Dried Lavender Flowers
Combine ingredients in a sauce pan, simmer until honey dissolves, strain into a mason jar or other suitable syrup container, allow syrup to chill (in the fridge) before using.
