Inspired by classic Italian flavours & pairings - the Maxtra-Zeneca presents sophisticated, full-bodied flavours to the front of the palate, with a remarkably light and silky finish. Often perceived as sacrilegious, the mixing of tea & coffee offers theories providing health benefits. This medicinal combination (+ current affairs) inspired the name of the cocktail.
This cocktail is batched, milk-clarified & garnished with a grapefruit wedge, soaked in maraschino syrup and later dehydrated.

MILK-CLARIFIED (recommended for silky finish and yum-yums).
Batch all ingredients.
To the batch:
Add lemon juice at a 1:20 ratio (where 1 is the lemon juice / 20 is the batch).
Add milk at a 1:4 ratio (where 1 is the milk / 4 is the batch).
Stir for two minutes. Let sit for approx. 30 minutes.
Strain through double-lined coffee/oil filters.
Re-strain through double-lined coffee/oil filters.
In mixing glass, stir clarified batch over ice until very cold.
Using oyster strainer, strain liquor over ice into a chilled rocks glass.
Garnish with a grapefruit wedge, previously soaked in maraschino syrup, dehydrated.

Mr Black and Cherry Heering is a dream combination. White rum adds body and depth. Hopped Grapefruit Bitters adds some intricacy, while the maraschino syrup adds a subtle sweetness. The dilution with chamomile tea makes the Maxtra-Zeneca drink like a refreshing iced tea.
