As an Irish guy based in Singapore for the last 11 years I wanted a way to fuse those 2 identities in a cocktail that reminded me of the best of both countries. Sitting at a hawker stall in Singapore drinking a local Kopi C with some Kaya toast but fortified by a bit of my Irish heritage. Recommend serving with a soldier of toast spread liberally with Kaya jam.

Ingredients
Directions
Shake all ingredients with ice
Double strain into Nick and Nora glass or a white double espresso cup.
Optional
Toast a piece of white bread and cut into a soldier
Spread liberally with Kaya jam and perch on the side.
Decadent and delicious!
