Whenever I have coffee, I think of my mother for it was she who started me drinking it. Black at first, and then onto espressos. Thinking of my mother in turn makes me think of my home and so coffee becomes one of my home comforts. I wanted to create a drink using flavours that for me, evoke the feelings of being home, the warming embrace of my loved ones and a place where I feel most at peace with the world.

Create spiced orange oleo saccrum using the peel of 3 oranges, 1 lemon and 100g of white sugar. Add 1 stick cinnamon and 1 seed of nutmeg and muddle together. Leave for 24 hours and strain through muslin.
Add all ingredients and ice to a two piece boston tin and shake. Double strain into glass.
Add orange twist garnish
