Heavens and Earth is inspired by the idea of two distinct spheres connecting and contrasting – earthy coffee, chocolatey, nutty umami and airy herbal lemon and honey, connected by sweet cardamom. An earthy Sour with Mr. Black, crème de cacao, Amontillado sherry, cardamom bitters, lemon and orgeat is topped with herbal honey lemon myrtle foam with egg white, lemon myrtle liqueur, DOM Benedictine, lemon and cardamom honey syrup, garnished with an edible peppery nasturtium flower and bee pollen.

The bee pollen works a treat on this. The complexity of flavours is incredible.

Thanks so much I love the bee pollen too – it sort melts into the foam as you enjoy the drink adding another texture as well a caramelly-honey flavour
