Heavens and Earth is inspired by the idea of two distinct spheres connecting and contrasting – earthy coffee, chocolatey, nutty umami and airy herbal lemon and honey, connected by sweet cardamom. An earthy Sour with Mr. Black, crème de cacao, Amontillado sherry, cardamom bitters, lemon and orgeat is topped with herbal honey lemon myrtle foam with egg white, lemon myrtle liqueur, DOM Benedictine, lemon and cardamom honey syrup, garnished with an edible peppery nasturtium flower and bee pollen.

Add lemon, toasted almond orgeat, Mr. Black, Sherry and Creme de Cacao along with Cardamom Bitters to a shaker tin with ice
Seal tins and shake for 30 seconds
Strain into prepared glass
Garnish with herbal lemon foam, bee pollen and an edible nasturtium flower
Preheat oven to 200 C, add almonds on a baking tray and toast for aboout 10 minutes or until fragrant
Blend until particles are not fully integrated but a milky consistency has been formed in the liquid
Strain into a clean jug using a nut milk bag (reserve nut solids for another use)
Measure yield of nut milk and add an equal amount of sugar and a pinch of xanthan gum to a clean blender along with the nut milk
Blend well until sugar has dissolved and xanthan is well incorporated
Stir in rosewater and orange flower water
Decant into a clean glass container or flip top using a funnel and store in the fridge
Add honey, warm water, crushed cardamom pods to a small saucepan and heat over low heat until honey is dissolved
Fine strain to remove cardamom
Decant into a clean glass container and refrigerate
Blend egg whites with xanthan using a hand blender or blender
Add all ingredients to a syphon, seal and shake well to combine
Add two cream whip charges
Shake hard until no sound can be heard
Refrigerate until cold before use
