The goal was to include all of the best flavors of breakfast in cocktail form. Bacon, orange juice, cinnamon, maple syrup, powdered sugar donuts, and of course coffee (so. much. coffee.) The challenge was to combine those flavors into something bright, complex, and not too sweet. It’s named for my oldest daughter, whom I call “sunshine” and who loves inventing cocktails with me.



 1 oz Mr Black Coffee Liqueur
 ¾ oz Bacon fat washed bourbon whiskey*
 ½ oz Citrus gin
 1.50 oz Fresh orange juice
  tsp Citric acid
 3 dashes Orange bitters
 2 tbsp Sucanat sugar
 1 tsp Cinnamon
 ¼ tsp Smoked sea salt
 1 tbsp Real maple syrup
 2 oz Bacon fat
 4.25 oz Bourbon Whiskey
 1 Powdered sugar donut hole
 1 Baby orange slice



Combine sugar, cinnamon, and salt. Spin the rim of a coupe in maple syrup, then dip in cinnamon/sugar/salt mixture. Try to avoid licking the remaining cinnamon sugar mixture off the plate.


Add orange juice and citric acid to shaker, swirl to combine.


Add Mr Black, fat washed bourbon, gin, and orange bitters to the shaker, top with ice, and shake until it’s cold enough to make your hands hurt.


Strain into cinnamon sugar rimmed coupe, and garnish with a powdered sugar donut hole and mini orange slice.


* Cook a pound of bacon for breakfast, then watch in shock as your progeny inhale the entire pound of said bacon without taking a breath. Reserve two ounces of bacon fat and combine in a jar with 4.25 ounces of bourbon. Let sit for 6-8 hours and commission the miniature humans to occasionally shake the bacon fat/bourbon mixture, then freeze until the fat has solidified. Strain into another container and use in all manner of delicious boozing. Reserve bourbon flavored bacon fat for other uses (I recommend substituting for butter in chocolate chip cookies).
