Ever had Jamaican ginger Cake? It's a super rich and gooey Cake, perfect for the cooler nights. Imagine how good it would be used in place of sponge fingers in tiramisu. That's this drink.
A bit of condensed milk at the bottom for richness, tonka bean old Tom gin, sumatran espresso for earthy chocolatey bitterness, Mr Black for that essential coffee flavour, and a syrup made with muscovado sugar and all the components of a mince pie. Christmas can't come soon enough for me!

Ingredients
Directions
Add the condensed milk to the bottom of the coupe or martini glass
Shake all other ingredients vigorously with ice
Strain over a teaspoon to layer on top of the condensed milk
Garnish with some cocoa nibs
1. Combine 300g dark brown muscovado sugar with 100g raisins, 100g sultanas, 1 diced green apple, 1 tbsp toasted cloves, 1 cinnamon stick, 1 tsp ground nutmeg & 1 star anise with 200ml water
2. Simmer for 20 minutes, turn off the heat and remove the cinnamon stick & Star anise before leaving to infuse overnight
