I always thought that coffee would go well with the smoke of mezcal. In Fireside Brew, you’ll find the smoke of the mezcal and chocolate of Mr Black which are balanced by the acidity of the beet shrub. In essence, this cocktail is a mezcal sour where the beet shrub acts as an earthy citrus.

Ingredients
Directions
Combine mezcal, Mr Black, Demerara syrup and beet shrub in a stirring glass and add ice
Stir for 30 scs
Strain and Serve
Cut beets into pieces and mix with sugar
Let the mixture rest in the fridge overnight
The beets should have released a lot of liquid. Add the vinegar and make sure all the sugar is dissolved
Strain and bottle
Combine sugar and water in a saucepan
Stir while heating until sugar is fully dissolved
Remove from heat and bottle
