Earth’s Core is a coffee orange Sour using blood orange, espresso, orgeat, Mr. Black, sherry, ginger liqueur, cacao bitters. The Earth’s Core has creamy texture and delicious orange coffee aroma and flavour. The inspiration for the Earth’s Core is Galsini’s Saturn. Rather than tropical fruit the Earth’s Core works with earthy dark fruity espresso and Mr. Black paired with sweet sour and spicy blood orange and toasted almond orgeat, fruity, nutty sherry, spicy ginger and a hint of cacao bitters.



 1 ½ oz Mr Black Cold Brew Coffee Liqueur
 ¼ oz Pedro Ximenez Sherry(Gonzalez Byass Elegante Medium Sherry)
 ¾ oz Blood orange juice
 ½ oz Toasted almond orgeat syrup(See below)
 ½ oz Espresso(Columbian Supremo Popayan beans)
 ¼ oz Ginger Liqueur(Domaine de Canton)
 4 drops Cacao & Macadamia BItters(Mister Bitters)
 100 g Toasted Almonds
 330 ml Hot water
 250 g Raw caster sugar
 1 pinch Xanthan gum powder
 1 tsp Rose water
 1 tsp Orange flower water



Add all ingredients except for espresso to mixing tin


Measure hot espresso into the mixing tin


Shake with ice for 30 seconds


Strain into chilled glass


Garnish with a blood orange wheel


Flame orange twist over drink and serve spent twist alongside the drink on a small tray with a few coffee beans and an orange wedge for added aroma


Toast almonds in a 200 C oven for about 10 minutes or until fragrant, allow to cool slightly to touch


Add toasted almonds along with hot water to a blender and blend until a milky liquid is achieved and particles are still present


Strain nut milk using a nut milk bag or cheesecloth into a clean jug (remove and reserve the nut pulp for another use)


Measure the yield of the nutmilk - for example 1 cup - and add equal parts of raw caster sugar back into a clean blender along with the nut milk - here I added 1 cup of raw caster sugar - add a pinch of xanthan gum along with the sugar to the nut milk


Blend well to dissolve sugar and integrate xanthan gum powder


Stir in rosewater and orange flower water


Decant into a clean glass container such as a preserving jar or flip top bottle using a funnel and store in the fridge
