This is delicious dessert drink based on banana, coffee, and Bourbon, with hints of other flavors.
I had already tried something with banana, cream, coffee and chocolate liqueurs in it. It was too sweet and rich. I wanted it more spirit forward, so I dropped the chocolate, bought some MR BLACK, added Amaro Nonino, and Angostura. Still too sweet and the banana taste disappeared. So I settled on trying for a Bananas Foster profile (typically with rum, but this was for a bourbon drinker on his birthday.)



 1 oz Banana infusion (homemade w banana mash, bourbon, Demerara, vanilla, molasses)
 1 oz Mr Black
 2 oz Bourbon
 2 drops Cardamom bitters
 2 dashes Orange bitters
 2 dashes Chocolate or pecan bitters
 0.50 cup Cream (frothed, soft whipped with blended banana)



Make in advance, banana mash infusion: 1-2 very ripe or overripe bananas mashed, 1-2 oz bourbon to achieve a thick banana liquid. Add 1/2 teaspoon vanilla, 1 oz measure of Demerara with a bit of molasses syrup. Let mash sit for 3-4 days in refrigerator before straining liquid through cheesecloth.


In advance, prepare softly whipped cream with banana chucks (1/2 cup cream and 1/3 banana make more than enough for 4 cocktails) and keep refrigerated till needed.


Add 1 oz strained banana liquid, 1 oz Mr Black, and 2 oz bourbon to shaker


Add bitters (cardamom, orange, chocolate, pecan)


Add ice to shaker and shake till chilled


Strain into a chilled coupe or Nick and Nora glass (double straining not recommended)


Finish by floating banana cream on top, garnish by laying a thin slice of banana on top, and sprinkle lightly with cinnamon or nutmeg
