I have always loved Irish coffees, the contrast of cream, coffee, and booze. However, I have always found myself wanting more variety with a similar build. The thought process was to build a cold format Irish-style coffee cocktail with a new flavor profile.

In a mixing glass combine the rhum agricole, creme de cassis, Mr Black coffee liqueur, cold brew, and allspice demerara syrup.
Fill the mixing glass halfway with ice.
Using a cocktail spoon, stir for 20 seconds.
Fill a cocktail glass or Irish coffee glass with ice.
Strain the contents of your mixing glass into the glass over the ice.
Slowly pour the sweetened cream over the back of a cocktail spoon into the cocktail glass so that it floats on top.
Garnish with an orange peel.
