Inspired by the classic Brandy Crusta, I came up with Black Crusta. I wanted to enhance the fragrance of this concoction, all at the same time retaining unmistakable crusta tasting notes but with unforgettable Mr. Black's unique cold brew Arabica coffee characteristics. It is after all a New Orlean's classic invented by an Italian bartender Joseph Santini. As coffee/espresso being an integrated part of Italian culture and tradition, there is a definite connection to Mr. Black.
Pour all the ingredients into a shaker, add cold ice and shake for about 10 sec to obtain a creamy foam on top. Pour into a small wine glass rimmed with sugar. Garnish with 360 degree lemon peel placed on the top.
To reflect my Japanese background, I rimmed the glass with sugar in Coral Frosting style sometimes done among Japanese bartenders, but it can be rimmed with sugar in a simple style.
