My cocktail "Black and Blue" is a dessert cocktail enjoyed along with a sweet dessert to compliment the coffees strong flavours. The name Black and Blue comes from the use of a blueberry syrup and the Mr Black Coffee Liqueur, as when first researching complimentary coffee pairings blueberries stood out to me. I wanted to highlight flavours of coffee, blueberry, and hints of dark chocolate without it being a heavy drink. my inspiration was imagining drinking this in the jazz clubs of the 1920s.
Pour white rum, coffee liqueur, and blueberry syrup into a shaker. Fill with ice and shake for 10-12 seconds.
Double strain into a seperate glass and clear out any ice in the shaker before adding the egg white, and dry shaking vigorously.
Strain into a chilled martini or coupe glass and garnish by grating the dark chocolate over the egg white and adding 4 blueberries skewered on a cocktail pick and placed horizontally in the glass.
Add 1 part blueberries to a pot along with a splash of water and boil the blueberries, stirring occasionally until all juices are released from the blueberries. a muddler or stirring utensil can be used to squeeze the blueberries while they're boiling. next, strain the liquid into a measuring cup, using a muddler to squeeze juice out of the blueberry skins. Then add 1 part sugar and stir to dissolve the sugar before cooling and bottling.
