I really love italy and my idea was to create something with Mr. Black and italian flavours. So my idea was based on italian chestnuts and I thought the combination of chestnuts, coffee, chocolate and amaro was perfect. I hope you like it 🙂



 50 ml Dark Rum (Infusion with Cacao Nibs & Demerara Sugar)
 20 ml Mr Black Coffee Liqueur
 10 ml Amaro Nonino
 2 dashes Chocolate Bitters
 20 ml Chestnut Espuma



Stir the ingredients until the glass gets frozen outside


Strain the ingredients into your chilled Coupe


Top with Chestnut Espuma


Chestnut Espuma:
-150g Chestnut Cream
-2 Eggwhite
-20ml Simple Sirup
-350ml Milk

Fill it in a siphon and charge it with two cartridges. Shake it for a minute and let it rest for at least 2 hours.


Rum-Infusion with cacao nibs and demerara sugar:
-one bottle of dark rum
-200g of cacao nibs
-100g of demerara sugar

Let it rest for 5 days.
